虎辭舊歲,兔躍新程。適逢農曆新年之際,祝大家玉兔迎春,萬事如意!今期Marco帶來一款賀年菜式—奶油雞油菌燴福袋!光看名字就已感到很吉祥了,材料更是非常豐富,且兼備營養價值呢!Marco表示,雞油菌富含維生素A,對眼睛保護有十分重要的作用,提高眼睛的抗病能力,起到明目的功效。而這道菜的做法亦不複雜,可謂以西式風格,在中式傳統上碰撞出新花樣。趕緊動手做起來,和親朋好友們一起吃着裝滿福氣的福袋,一同迎接新年到來吧!

奶油雞油菌燴福袋

材料(2人份):
雞蛋  1個
乾雞油菌  15g
粟米粒  5g
甘筍粒  5g
西芹粒  5g
雪耳  5g
韭菜 2條(芹菜)

調味料:
牛油  1茶匙
忌廉  30ml
鹽  適量
胡椒  少許

 

Creamy Chanterelle Mushrooms with Stuffed Omelette Pocket

Ingredients  (serves 2):
1 egg
15g dried chanterelle mushrooms
5g corn kernels
5g carrot dices
5g celery dices
5g snow fungi
2 chinese chives (or celery)

Seasonings :
1 tsp butter
30ml cream
A pinch of salt
A sprinkle of ground black pepper

做法:

  1. 先把雞油菌、雪耳各自浸軟切粒,備用;
  2. 雞蛋打勻,放少許鹽,用易潔平底鑊煎成蛋皮,備用;
  3. 甘筍粒灼三分鐘,撈起備用;
  4. 平底鑊下油燒熱,放入粟米粒、甘筍粒、西芹粒、雪耳粒炒至軟身,下鹽、黑胡椒調味,撈起,然後包在蛋皮內,用韭菜(或芹菜)綁實頂部成福袋,放碟中間;
  5. 平底鑊下牛油燒熱,把瀝乾水的雞油菌下鑊爆炒,再放入忌廉煮熱,放鹽、黑胡椒調味,煮熱後淋在福袋四周,即可享用。

Steps:

  1. Soak the chanterelle mushrooms and snow fungi in water separately until soft. Cut into dices. Set aside.
  2. Season the egg with a pinch of salt. Beat the egg. In a non-stick frying pan, add the egg and spread it evenly. Fry until the omelette firms up.
  3. Blanch the carrot dices for around 3 minutes. Drain and set aside.
  4. Heat a drizzle of oil in a frying pan. Stir fry the corn kernels, carrot dices, celery dices and snow fungi until soft. Season with salt and ground black pepper. Take out. Place the filling in the middle of the omelette. Pull together the edges of the omelette like a pocket and use a chives leaf (or celery) to tie it up. Place it in the middle of the serving plate.
  5. Melt the butter in a frying pan. Drain the chanterelle mushrooms. Add them to the frying pan and stir fry. Pour in the cream. Sprinkle with salt and ground black pepper. Once it is hot, pour it into the serving plate, surrounding the omelette pocket. Ready to serve.
