腐皮卷的營養價值完全取決於它的內「涵」。東后齋這款腐皮卷是由榆耳和黃耳作為主要食材。榆耳本身帶有食療之效,清熱利濕,涼血止痢;口感方面,入口爽脆,帶有清幽的菌香。而黃耳則能增加新陳代謝,具抗氧和降低膽固醇的效力。師傅教路,想要腐皮卷的內涵豐富,材料的比重要平均。

 

黃耳榆耳腐皮卷

材料︰

腐皮 1 張

榆耳 6 隻

木耳 6 隻

冬菇 6 隻

竹笙 6 隻

黃耳 6 隻

生粉 少許

麵粉 少許(用作糊口)

(注意:材料分量對稱即可)

調味料︰

素蠔油 少許

鹽 少許

老抽 少許

糖 少許

做法︰

  1. 腐皮一開八,剪成長方塊。
  2. 其他材料浸透、切絲、汆水。
  3. 煮開調味料,放入汆水後的 2 ,以生粉水埋薄芡, 成餡料。
  4. 每張腐皮包入適量餡料,捲起,以麵粉水糊口。
  5. 腐皮卷煎至金黃色,盛起,再加滾油炸透即可。 

 

 Deep Fried Bean Curd Rolls with Various Fungus

Ingredients:

1 piece bean curd sheet

6 pieces Yu-er fungus

6 pieces Mu-er fungus

6 pieces dried black mushroom

6 pieces bamboo fungus

6 pieces golden fungus

A suitable amount of corn flour and plain flour

Seasonings:

A suitable amount of vegetarian oyster sauce, salt, dark soy sauce and sugar

 

Steps:

  1. Scissor the bean curd sheet into 8 pieces of rectangle shape.
  2. Soak the other ingredients thoroughly. Finely slice and par boil them.
  3. Heat the seasonings and put in the par boiled ingredients of step 2 into the pan. Add in corn flour paste to thicken the sauce. The stuffing is ready.
  4. Put a suitable amount of stuffing onto each bean curd rectangle. Fold up and seal with flour paste.
  5. Shallow fry the bean curd rolls to become golden brown. Remove from the pan. Prepare abundant boiling oil. Deep fry the rolls briefly.
