很多人愛吃酸酸甜甜的糖醋排骨,皆因它既香口,又開胃。今期大廚 Athlon 教大家繼續用「新豬肉」製作素版好味道料理!這一款糖醋排骨不僅色澤紅潤、酸甜脆嫩,連外形也與真排骨極像,非常適合這段居家時期「下廚解憂」!不試不知道,一試嚇一跳,素版排骨既沒有真肉的腥味,同時因為有甘蔗的加入,讓味道更加清香解膩,非常容易下飯!如果覺得整天吃綠色蔬菜很悶,不妨動手為餐單添加色彩吧!也許會讓你從此愛上下廚喔!

糖醋素排骨

材料:(1人份量)
植物豬肉碎(230克)
甘蔗(2節)
番薯粉(3湯匙)
麵粉(2湯匙)
(沒有麵粉和番薯粉,可用5湯匙生粉代替)

醃料:
玫瑰露(1茶匙,可選擇不用)
醬油(1茶匙)
糖(1茶匙)
胡椒粉(1茶匙)
生粉(1茶匙)
薑汁(1湯匙)

糖醋汁:
玫瑰露(1湯匙,可選擇不用)
黑醋(3湯匙)
醬油(1茶匙)
茄汁(2湯匙)
冰糖(25克)
生粉(1/2茶匙)
(貼士:如用已加了糖的甜醋,試味後覺得喜歡便可以不加冰糖,但冰糖風味更出色,建議用無加糖的黑醋。)

作法:

  1. 將醃料全部加入「新豬肉」,拌勻。
  2. 甘蔗去皮,切成4-5cm小段,再垂直破開成直徑8mm條狀。
  3. 將「新豬肉」搓成一小團,包在甘蔗上,輕輕按壓成「排骨」狀。
  4. 將番薯粉和麵粉混合。
  5. 將「排骨」表面沾滿混合了的番薯粉及麵粉。
  6. 燒熱油,將「排骨」以中火四邊煎成金黃色,盛起備用(建議下多點油,用半煎炸的方式煎更香口)。
  7. 將糖醋汁材料混合拌勻,冰糖可用少量熱水預先溶解。
  8. 糖醋汁落鑊煮滾,放入煎好了的「排骨」,炒至收汁便成。
     

Vegetarian Sweet and Sour Spareribs

Ingredients:  (serves 1)
230g OmniPork
2 joints of sugar cane
3 tbsp sweet potato flour
2 tbsp flour
(The flour and sweet potato flour can be replaced by 5 tablespoons of cornstarch)

Marinade: 
1 tsp Chinese rose wine (optional)
1 tsp soy sauce
1 tsp sugar
1 tsp pepper powder
1 tsp cornstarch
1 tbsp ginger juice

Sweet and sour sauce: 
1 tbsp Chinese rose wine (optional)
3 tbsp black vinegar
1 tsp soy sauce
2 tbsp ketchup
25g rock sugar
1/2 tsp cornstarch
(If you use sweet vinegar, you may leave out the rock sugar − if it is sweet enough after tasting. Yet rock sugar gives a wonderful flavour to the dish, it is recommended to use black vinegar without sugar.)

Steps:

  1. Mix all marinade ingredients with the OmniPork.
  2. Peel the sugar cane. Chop into pieces of 4-5cm. Then chop the pieces into sticks of 8mm diameter.
  3. Form the OmniPork into small balls. Wrap the OmniPork around the sugar cane. Stick and gently press into sparerib-like pieces.
  4. Mix the sweet potato flour and flour.
  5. Coat the “spareribs” with sweet potato flour and flour.
  6. Heat up a lug of oil. Fry the “spareribs” over medium heat until all sides golden. Take them out and set aside. (To create a crispier crust, shallow fry the spareribs with a bit more oil.)
  7. Mix the sweet and sour sauce well. You may dissolve the rock sugar in a small amount of hot water beforehand.
  8. Pour the sweet and sour sauce into the frying pan. Bring to the boil. Toss the “spareribs” in the sauce until the sauce thickens. Dish up and serve.
