今年的西方情人節巧遇正月十五中國元宵佳節,非常難得,而慶祝這種温馨節日的食物,甜品當然是少不了。今期 Ken 示範的甜品為雜莓芝士餅。若大家有留意 Ken 的食譜,會發現他的選材方便購買,烹煮過程不繁複,而且十分着重味道的分配;這款甜品亦不例外。大家不妨試一試親手為情人做一個愛心芝士餅。

 

雜莓芝士餅

餅底 ︰

消化餅 60 克

已溶牛油 30 克 (6 寸分量 )

芝士餡材料 ︰

忌廉芝士 250 克

酸忌廉 120 克

糖 60 克

粟粉 15 克

淡忌廉 2 湯匙

天然雲呢拿油 1 茶匙

已溶牛油 30 克

裝飾 ︰

藍莓粒果醬、紅桑子適量

做法︰

  1. 忌廉芝士及酸忌廉先在室溫下放置至軟身。
  2. 將消化餅壓成碎沙狀,然後加入已溶化的牛油拌勻,平均倒入餅模內用湯匙背壓平壓實,備用。
  3. 芝士加糖用打蛋器打至忌廉狀,然後加入酸忌廉 打至軟滑。
  4. 將粟粉、淡忌廉、已溶牛油及雲呢拿油加入芝士 糊中拌勻,然後倒入餅模內。
  5. 焗盤倒入熱水再放上鐵架,芝士餅放在架上用攝 氏 180 度半蒸焗約 70 分鐘至餅面金黃色。
  6. 關火後 1 小時才由焗爐取出,防止溫差太大使芝 士餅中心塌下。 待涼後用刀刮邊脫膜取出,放入 雪櫃雪數小時,最後餅面鋪上藍莓果醬和紅桑子 裝飾,完成。 

 

 Berries cheese cake

Ingredients:

Cake Base:

60g Digestive biscuit

30g melted butter Cheese

Filling:

250g cream cheese

120g sour cream

60g sugar

15g corn fl our

2 tablespoons light cream

1 teaspoon natural vanilla oil

30g melted butter

Decoration:

A suitable amount of blueberry jam and raspberry

Steps :

  1. Place the cream cheese and sour cream under room temperature until softened.
  2. Press and shatter the digestive biscuit. Add in melted butter and mix well. Pour into a 6 inch cake mode and press tightly with the back of a spoon.
  3. Use an electric blender to blend the cheese with sugar to become creamy. Then add in sour cream and continue to blend until very soft.
  4. Put corn flour, light cream, butter and vanilla oil into the cheese mixture of step 3. Then pour into the cake mode of step 2.
  5. Pour some hot water into a baking tray and place a rack in it. Put the cake mode on the rack. Par bake and steam in an oven of 180 C for 70 minutes until golden brown.
  6. Turn off the oven and leave it inside for 1 hour. When cool, take out from the mode by using a knife scrape around the cake. Put into the fridge for a few hours. Spread the blueberry jam on the cake evenly and place the raspberries on them. Ready to serve.
