南瓜意大利飯

材料:(2人份)
意大利米130克
蔬菜高湯600毫升
洋蔥1個(可不用)
南瓜300克
芝士碎15克
橄欖油1湯匙
黑胡椒粉 (適量)
鹽 (適量)
紅椒碎 (裝飾用)
 

Pumpkin Risotto

Ingredients:  (serves 2)
130g risotto rice
600ml vegetable stock
1 onion (optional)
300g pumpkin
15g grated cheese
1 tbsp olive oil
A pinch of ground black pepper
A pinch of salt
Red pepper flakes (for decoration) 

作法:

  1. 南瓜去皮,南瓜和洋蔥洗淨切粒;
  2. 蔬菜高湯煲熱備用;
  3. 燒熱鍋後,落橄欖油,用中大火將洋蔥略炒
  4. 分鐘。加入南瓜粒和4湯匙蔬菜高湯,煮10分鐘至南瓜軟身;
  5. 加入意大利米,轉中火,逐少加入蔬菜高湯,並不停攪拌及將部分南瓜粒壓爛。繼續加入高湯和攪拌,煮至飯熟,整個過程約需
  6. 20分鐘;
  7. 灑上芝士碎,用黑胡椒粉和鹽調味,拌勻。上碟,灑上紅椒碎即成。

 Steps:

  1. Peel the pumpkin. Wash and dice the pumpkin and onion.
  2. Heat the vegetable stock. Set aside.
  3. Heat up the cooking pot and drizzle with olive oil. Sauté the onion over medium-high heat for 2 minutes. Add the pumpkin dices and 4 tablespoons of vegetable stock. Cook for 10 minutes until the pumpkin softens.
  4. Add the risotto rice and reduce to medium heat. Slowly add in swigs of vegetable stock and stir well. Mash some of the pumpkin dices while stirring. Keep on stirring and adding in vegetable stock until the rice is done. The process takes roughly 20 minutes.
  5. Sprinkle with grated cheese. Finish off with a pinch of ground black pepper and salt. Mix well. Dish up. Decorate with red pepper flakes.
