米紙卷迎中秋

米紙卷的材料通常少不了芽菜,給人一種夏天食物的感覺。然而,米紙卷的材料配搭千變萬化,可依隨自己的口味偏好而定。Eli 示範的這款米紙卷,採用色澤較温暖的材料,營造一種秋天的味道。這個中秋節不妨試一下。

中秋米紙卷

材料︰

米紙 10 張

冬菇 6 隻

栗子 10 粒

紅蘿蔔 1 根

珍珠筍 5 條

木耳 50 克

米粉 1/4 磅

(餡可以隨意轉變,夏天的米紙卷也可用 生菜做餡)

餡調味料︰

鹽 少許

生抽 少許

黑胡椒 少許

醬汁材料︰

生抽、蜜糖、麻油、橄欖油、薄荷葉、白 芝麻各少許。

醬汁做法︰

將薄荷葉磨碎,再加入少許生抽、麻油、 橄欖油、蜜糖和白芝麻,即可。

做法︰

  1. 用滾水汆燙米粉,瀝乾水備用。
  2. 洗、切材料,然後熱鑊,落少少油,爆香薑片, 炒熟材料,加調味料。
  3. 將炒好的材料和米粉撈勻。
  4. 用清水浸透米紙,瀝乾。
  5. 將材料和米紙包捲成米紙卷即可。

温馨提示:避免米紙破裂,不宜浸於水中太久,浸透即可。

 

Rice Paper Rolls In Autumn

Ingredients:

10 pieces rice paper

6 pieces dried black mushroom

10 pieces chestnut

1 piece carrot

5 pieces baby corn

50g Mu-er

1/4 lb rice noodle

Seasonings:

A suitable amount of salt, light soy sauce and black pepper

Sauce:

A suitable amount of light soy sauce, honey, sesame oil, olive oil, mint and white sesame

To make the sauce:

Grind the mint before add in light soy sauce, honey, sesame oil, olive oil and seseame.

Steps :

  1. Cook the rice noodle and drain thoroughly. Set aside.
  2. Wash and finely slice all the other ingredients for stuffing. Put a little oil into a heated pan and add in ginger slice. Put in the sliced ingredients and stir fry. Add in the seasonings.
  3. Mix the cooked stuffing of step 2 with the rice noodle of step 1. Set aside.
  4. Soak the rice paper thoroughly and drain well
  5. Put a suitable amount of stuffing of step 3 onto the rice papers and fold to become rolls.

Tips: Don’t soak the rice paper too long. Otherwise they will torn apart easily.
